Field of Greens, Twice, on Two Sides of Town
The health-forward café brand Field of Greens didn't open one Palm Beach Gardens location this spring. It opened two. The health-focused café brand expanded with two new locations in Palm Beach Gardens this spring, known for colorful salads, smoothies, and cold-pressed juices, with a plant-forward menu created by chef Thomas Op't Holt. The Donald Ross Road location, near Alton, opened March 13, followed by the Northlake Boulevard location on April 3.
For residents, the practical takeaway is geography. One address, 5320 Donald Ross Rd., puts a fast-casual healthy lunch inside the Alton orbit next to Lynora's, Kitchen, Miller's Ale House, Longhorn, Bolay, and Chipotle. The other, 12485 Northlake Blvd., pulls the same concept west toward Avenir and the newer subdivisions off Coconut. If you live west of the Turnpike, you no longer have to drive east for a cold-pressed juice.
Phatboy Sushi Lands on Lake Victoria in Late July
The bigger summer story is Phatboy Sushi Kitchen & Bar, opening in the middle of Downtown at the Gardens. Phatboy Sushi Kitchen & Bar is targeting a mid-to-late July opening at 11701 Lake Victoria Garden Ave. #8102, Palm Beach Gardens, FL 33410. If you're reading this in early August, the doors are either just open or about to be.
A few specifics worth knowing before you go:
- The Palm Beach Gardens location will seat about 80 guests inside, including the bar, with about 40 seats outside on a patio, which puts it firmly in the size class that takes walk-ins on a weeknight but expects a wait on Friday and Saturday.
- The restaurant offers full-service dining, a full liquor bar, and a menu built around sushi, Japanese fusion, and hot food, with menu highlights including noodles, hibachi skillets, shareable appetizers, and lunch specials.
- The restaurant offers Martini Mondays with half-off lychee martinis all day, along with all-day happy hour on Tuesdays.
- Hours are Sunday through Thursday from 11:30 a.m. to 10:30 p.m., and Friday and Saturday from 11:30 a.m. to midnight.
The Palm Beach Gardens restaurant is the brand's seventh location and its first new build-out from the ground up, with the family's first location in Fort Lauderdale recently celebrating the brand's 10-year anniversary. Translation for locals: this isn't a soft-launch experiment. The operators know what they're doing and picked Downtown at the Gardens on purpose.
The location choice matters. Dropping a mid-size sushi and hibachi restaurant into the same complex as the summer concert series, the carousel, the splash pad, and Whole Foods creates a genuinely different Friday-night sequence. Dinner at 6, concert at 7, ice cream at 9, done. That's a night out you could not construct in the same square footage a year ago.
Why Avenir Changes the Map
Avenir Town Center is the piece that will still matter in December. Opening in summer 2026, this hub will feature the newest locations of Kitchen, Field of Greens, and Taki Kappo Omakase.

It's concentrating along Donald Ross Road at Alton, at Lake Victoria Gardens Avenue in the Downtown complex, and out at Avenir. If your house is close to any of those three, the walk-and-drive economics of daily life have already improved this year. If you're farther south along PGA Boulevard, the change is slower.
Second, the operators moving in are experienced multi-unit brands, not first-time restaurateurs. Phatboy is on its seventh location. Field of Greens is expanding under a named chef. Kitchen is opening its second area address. That mix is what a city looks like when it stops being a place people move to and starts being a place operators expand into. It's a quiet signal, but a durable one.
